the 'black' is maa-yu, a kind of oil. maybe made from garlic? it's especially popular in ramen here in kyushu. i dunno, it was pretty good.
i didn't make it, i bought it in a shop called hana-chan, which is here in munakata.

wow. That's pretty wild! I used to live in a big ramen eating town and the local favourite was ramen with a HUGE pile of raw garlic on top. Some shops even gave you a drinking yoghurt thing when you left and they all gave you mints.
